Happy Sunday, Red Vine Family!

Wow. What a couple of weeks our family has had, and it’s landed us all home coughing in our comfies. After watching church live from our couch this morning, we’re watching the Seahawks play and eating good food. I don’t care how sick I am; Sunday breakfast is always worth the hassle.

Today’s menu includes an Arthur family staple, the “Game Day Scramble” with Pioneer Woman’s Sausage Gravy.

To make the scramble:
Dice a pound of bacon and fry until crusty but not crisp. Remove the bacon and drain, but leave the grease (It’s Sunday and the Seahawks are playin, y’all!). Add one diced onion and two diced bell peppers (red, green or yellow, whatever you’ve got) with a heaping teaspoon of minced garlic and sauté for a few minutes. Add a pound of frozen hash browns and two big pats of butter (better for the browning:) and cook until potatoes are browning and cooked through.

Now: stir in cooked bacon and a dozen eggs and cook until eggs are well incorporated and well cooked. Then, add at least a cup of shredded cheddar cheese to the top of your scramble and put the lid on the pan until the cheese is melted.

Serve in big bowls with heaping ladles of sausage gravy over the top.

This is why I will never be a size 2 again. But it’s Sunday, y’all!
